Hey you !!! I read that you love good food, so here is a recipe for you.
Here is the complete, step-by-step recipe for making perfect crispy at home, worthy of the best Asian roast meat shops.
📋 Ingredients
• 1.5 kg belly (fresh, thick, and with the skin on)
• For the marinade (meat side):
• 1 teaspoon five-spice powder
• 1 teaspoon salt
• ½ teaspoon white (or black) pepper
• 1 teaspoon sugar
• For treating the skin:
• 2 tablespoons white vinegar
• 200–300g coarse salt (to form the cooking crust)
🛠️ Preparation steps
Step 1: Blanching and pricking
- Heat a pot of water. Submerge the pork belly—skin side only—for 10 minutes. The meat itself should remain out of the water. This softens the skin.
- Remove the meat and dry it thoroughly with paper towels.
- Using a fork, a meat pricker, or toothpicks, poke hundreds of small holes all over the surface of the skin. The secret: stay on the surface; do not pierce through the fat layer to reach the meat.
Step 2: Marinating and drying (The secret to crispiness) - Flip the belly over (meat side up). Make parallel cuts about 2 cm deep into the meat.
- Evenly rub the spice mixture (five-spice, salt, pepper, sugar) only onto the meat and into the cuts. Important: No spices should touch the skin, or they will burn in the oven.
- Take a sheet of aluminum foil and shape it to wrap around the sides and bottom of the pork, like a small cardboard box. The skin must remain completely visible and uncovered on top.
- Brush the rind with white vinegar.
- Place the whole thing in the refrigerator, uncovered, overnight (or for at least 4 hours). The fridge air will completely dry out the skin.
Step 3: The first cook (Cooking the meat) - The next day, take the meat out of the fridge 30 minutes before putting it in the oven.
- Preheat your oven to 200°C (fan-assisted/convection).
- Cover the entire surface of the skin with a thick, even layer of coarse salt.
- Place the meat (still in its aluminum foil "nest") on the oven rack and roast for 45 to 50 minutes. The salt will absorb any remaining moisture while the meat cooks through.
Step 4: Puffing up (The grand finale) - Remove the meat from the oven. The salt layer will have hardened into a crust; carefully remove it in one piece and scrape off any remaining salt grains with a knife.
- Set your oven to Grill mode at 210°C–220°C.
- Return the pork to the oven (on the middle or upper rack). Watch closely through the oven door: within 10 to 20 minutes, the skin will start to bubble and puff up, turning golden and ultra-crispy.
🔪 Resting and carving
Let the meat rest uncovered for 15 minutes before handling it. As it cools slightly, the skin will finish setting and become perfectly crisp.
To carve, place the piece skin-side down on the cutting board (meat facing up) and cut into large cubes with a single, swift motion using a sharp knife or cleaver; this prevents the rind from separating from the meat.
💡 The 3 golden rules for perfect crackling - Pricking: Prick as many small, closely spaced holes as possible over the entire surface of the rind using a fork or meat pick. This allows the fat to escape and helps the skin crisp up evenly.
- Drying: Moisture is the enemy of crispiness. Brush the skin with white vinegar and let the meat rest uncovered in the refrigerator overnight (or for at least 3 to 4 hours).
- Salt crust: Covering the skin with a generous layer of coarse salt during the initial cooking phase absorbs any residual moisture.
Braised ham is a classic French dish that involves cooking a cut of ham—or a whole ham—slowly in liquid, such as broth, milk, or a mixture with aromatics.
Ingredients (serves 4–6; simple 1 kg version)
• 1 kg ham (semi-cured/salted or roasting ham)
• 2 onions and 2 cloves of garlic
• 1 bouquet garni (thyme and bay leaf)
• 1 L milk (or vegetable/meat broth)
• Olive oil, salt, and pepper
Preparation and Cooking
- Brown the meat: In a Dutch oven or heavy-bottomed pot with a little olive oil, brown the ham on all sides.
- Add aromatics: Stir in the sliced onions, crushed garlic, and bouquet garni.
- Add liquid: Pour in enough milk (or broth) to cover the ham halfway and season lightly.
- Simmer: Cover the pot and cook over very low heat for 1.5 to 2 hours (allow approximately 1.5 to 2 hours per kilogram).
- Finishing touch: Serve the ham sliced with its reduced sauce (blend the cooking juices with a little cream) and steamed potatoes.
Other popular variations
• Honey and mustard: Brush the ham with honey and grainy mustard, then roast in the oven for 35–40 minutes at 190°C.
• Garden vegetables: Inspired by Julie Andrieu’s recipe, featuring fennel, carrots, and thyme, finished in the oven at high heat. • Griddle / Pan-fried: For a quick version, slice thickly (approx. 2 cm) and pan-fry for 2 minutes per side with Herbes de Provence.
