Step 1: Blanching and pricking
- Heat a pot of water. Submerge the pork belly—skin side only—for 10 minutes. The meat itself should remain out of the water. This softens the skin.
- Remove the meat and dry it thoroughly with paper towels.
- Using a fork, a meat pricker, or toothpicks, poke hundreds of small holes all over the surface of the skin. The secret: stay on the surface; do not pierce through the fat layer to reach the meat.
Step 2: Marinating and drying (The secret to crispiness) - Flip the belly over (meat side up). Make parallel cuts about 2 cm deep into the meat.
- Evenly rub the spice mixture (five-spice, salt, pepper, sugar) only onto the meat and into the cuts. Important: No spices should touch the skin, or they will burn in the oven.
- Take a sheet of aluminum foil and shape it to wrap around the sides and bottom of the pork, like a small cardboard box. The skin must remain completely visible and uncovered on top.

Step 4: Puffing up (The grand finale) - Remove the meat from the oven. The salt layer will have hardened into a crust; carefully remove it in one piece and scrape off any remaining salt grains with a knife.
- Set your oven to Grill mode at 210°C–220°C.
- Return the pork to the oven (on the middle or upper rack). Watch closely through the oven door: within 10 to 20 minutes, the skin will start to bubble and puff up, turning golden and ultra-crispy.
