Aglio, Olio e Peperoncino is the simplest pasta there is, which is why the pasta itself matters so much. With only garlic, oil and chili, there’s nothing to hide behind.
Tonight I used Ercoli spaghetti from Storico Pastificio Ercoli, a pasta maker since 1945:
🇮🇹 100% Italian durum wheat
🔶 Bronze-drawn, so the surface is rough and holds the oil
⏳ Slow-dried at low temperature for 28 hours, so it stays firm and doesn’t go soft
Cooking time on the pack is 13 minutes, 11 for al dente. Take it out at 10 and finish it in the pan with a splash of pasta water. That’s when the oil turns creamy and coats every strand.
Simple ingredients, done right. That’s Italian cooking. 🇮🇹
