That can also be done with the white notes of the piano, and with any instrument, you just need to play the Pentatonic Scale. The black notes are just a pentatonic.

I never thought about why white and black were chosen. But, certainly, there are some historic reasons for that. Piano keys were used to be made from elephant ivory, right? What were their most common natural colors? Also, white and black contrast nicely.
Both are good starting instruments. If you want to dive into theory and write your own songs I would suggest learning piano first because it’s very linear. Guitar is good if you want to jam with other people or take out places.
both are capable of either, theory on guitar is the same but just not as intuitive. Also they both can hit the same genres and are flexible in how you play them. The only thing about guitar is deciding if you want steel (contemporary) or nylon (classic)
