Never knew iron bark could be used for smoking, a good supply of that around my place.

Yeah its really nice for beef. I'll usually smoke it for ~5-8hrs before wrapping it in foil. Just make sure the wood is nice and clean. Ive picked up some 'dirty' ironbark, which is fine for a fire but not cooking.
