I've had the best tasting chips cooked in tallow. If you can source Suet from your butcher, its normally very cheap.
If you can't then I would use olive oil. avoid the vegetable oils.

Its tallow time.
Rendering down suet. nothing makes food more delish than using tallow from suet. And its one of the most highest stearic acid composition found in nature.
