this is the "King of the Jasmines", or Bai Hao Yin Zhen jasmine, a silver needle jasmine. it's more expensive than i'd ever like to admit, but the aroma alone is worth it. less complex than the Bi Tan Piao Xue but extremely balanced
savage. MIT OCW is amazing, as suggested. what are you trying to learn? theoretical (string theory etc), applied? or like quantumy stuff?
it's quite clear that the japanese oolong is lighter (less oxidized, closer to a green) than the Da Hong Pao. the japanese oolong has almost a buttery taste, while the Da Hong Pao has a stronger "rocky" taste.
this is a Japanese oolong originating from Fukuoka, something that can be difficult to find. it quite a bit lighter than a sencha but still has a rich taste.
this is Da Hong Pao, a rock tea which is a type of oolong grown in the Wuyi mountains. it is a really smooth, balanced tea, probably my favorite oolong thus far. they're called "rock tea" because of the "rocky" taste that growing in the mountains creates.

Most infamously, Huo Shan Huang Ya, a famous yellow tea at one time, has been lost to history. Anhui, being a poor province, lost the technique because the expense in producing it could not be sustained in the local market.
Thus for the thousand kinds of green tea, there are only three kinds of yellow tea that survive today.

On the market however, famous “yellow” teas often retain their original name, even if they don’t retain their original processing techniques. No indication is made to the consumer whether he or she is buying Lu Zhen or Huang Zhen.
... and probably would have become completely extinct if it were not so valued by the locals for its health benefits.
Yin Shen is stored in a wooden box. At intervals the tea is fried again and re-wrapped to cool and oxidize slightly. This process continues for up to three days and then slow roasted at the finish.

The remaining yellow teas are Jun Shan Yin Zhen from Hunan on Jun Shan island in Dong Ting lake, Meng Ding Huang Ya from Meng Ding Shan in Sichuan, and Mo Gan Huang Ya from Mo Gan Shan in Zhejiang, being the least known and rarest of the yellow teas.
A tea called Huo Shan Huang Ya can still be found on the tea market, although it has been made as green tea. The people the Anhui found it still commands a respectable price, and it is easier to sell as a green tea.
More over, with examples of authentic yellow tea becoming increasingly rare, few consumers have had enough exposure to tell the difference.

The leaves are fried, as is the case in most green teas, but then the leaves are wrapped in some kind of material, thick paper in the case of Yin Zhen, and cloth in the case of the other two.
Yellow teas are made for the appreciation of locals and have never had a broad market presence. Growing out of an elaboration of green tea techniques, the process for making yellow tea is time consuming and difficult.
When you consider the processing time coupled with the limited harvesting time for the tea to be plucked, you can understand why this tea has had a hard time surviving, ...
this is Bi Tan Piao Xue ("Snow Drop in Emerald Pond"), a high quality jasmine with a green tea base. this is an amazing jasmine - it brings a complex flavor through 4-6 "shorter" perfuming sessions instead of one or two long ones.
often times it can be difficult to differentiate the nuanced taste profiles of teas, but when you taste two jasmines in cups next to each other, you immediately understand how much variety can exist within a type of tea.

yeah I’m always wary of tying together mathematics and computation. i wonder how different that conversation wouldve been before the classification of the “bit”.
but perhaps that separation is my own shortcoming, nowadays its really all up for grabs
