Hey . I usually make what is called a frsh sauce and it's really easy. I don't make huge batches to can or jar just make sauce for the night's meal . Get deep frying pan or sauce pan put 4 or so tablespoons of olive oil in it heat it up. Add 3 cloves or so of chopped garlic let it simmer just a bit until u smell the garlic then take it off heat as u don't want the garlic to burn. Get tomatoes as ripe as possible and cut them take off some skin if you can with knife . Once cut up I put in the pan with the garlic and oil add some fresh basil from the garden and use a potato masher to mash it all down and let it cook down and get rid of some of the water so it gets thick. Add salt and pepper to taste. Some variations include adding some grated zucchini or even 3 or 4 anchovies for an umami taste which is really good. Once sauce is done make ur pasta drain it and put some sauce in bottom of pan then add pasta back and pour sauce over top and stir and let it absorb a bit. It really is easy and once u get the hang of it you make your own variations. Hope this helps some. The key is letting tomatoes get really ripe as they are sweeter. If your sauce tastes a little acidic u can add maybe half a teaspoon to a teaspoon of sugar but not too much.
