You can find all the plans and diagrams for the module if you really want to understand it or build your own.
It looks that way because they didn't waste weight adding body panels.
Strip the panels off your car for a clue.
It's literally the most documented event in history and pretty much every file they produced is available to read in the NASA archives if you really want your questions answered on how it was done.

This video is on Earth, lots of oxygen around to make flame.
The moon is low gravity in a near vacuum, the propellants are in the lander, not the orbiter. They explode, release pressure, push the orbiter up.
You see it happen in the video.
The astronauts leaving the moon are not in a rocket ship.
The module just needs to be pushed out of the influence of the Moons low gravity. The mixture of propellants burst quickly inside the lander, pressure forms and pops the module up & away.

It was controlled by pre-set commands based on trajectory sent from Earth to high-gain antenna on the rover.
It failed on Apollo 15, they set it too close on Apollo 16 missing most of it & they nailed it on Apollo 17.
